Buttermilk Birthday Cake with Raspberry Icing

This is my daughter Juni's favorite cake. I make it for her every birthday.

Buttermilk Birthday Cake with Raspberry Icing

  • 2 cups sugar
  • 1 cup butter
  • 3 eggs
  • 1.5 tsp vanilla
  • 3 cup flour
  • 1.5 ts baking powder
  • 0.25 ts salt
  • 1 cup buttermilk
  • Raspberry Icing;
  • 10 oz softened butter
  • 16 oz powdered sugar
  • 1 ts vanilla
  • 1 cup frozen or fresh raspberries
  • (I like a lot of icing so I double this recipe)
  1. Cream sugar and butter in kitchen aid for about 8 minutes
  2. Add eggs one at a time
  3. Add vanilla
  4. Add to mixture alternate with buttermilk
  5. Use 2 round forms and bake at 350’ for 20 minutes
  6. Let cool completely, wrap in saran wrap and freeze overnight Next day make the icing and put on cake while still completely frozen. Enjoy!
