Vegetable Lasagna

This is the perfect lasagna to serve to both vegetarians and carnivores, it is a little time consuming but definitely worth it.

  • 12 ready cook lasagna noodles
  • 2 tsp oil
  • 2 cups broccoli, chopped
  • 1.5 cup carrots, sliced
  • 1 cup green onions, diced
  • ½ cup bell peppers, diced
  • 3 cloves garlic, minced
  • 3 tabs butter
  • ½ cup flour
  • 3 cups milk
  • ½ cup parmesan cheese
  • Salt/pepper to taste
  • 1.5 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded Swiss cheese
  1. Preheat oven to 375’’
  2. Sautee vegetables in oil until tender
  3. Make white gravy with butter, flour, milk and parmesan
  4. Mix cottage cheese, mozzarella and Swiss
  5. You now have 3 different ‘sauces
  6. Layer the sauces beginning with white gravy on bottom, then vegetables and then cheese mix, and add the lasagna noodles in between Cook at 375’ for 35 minutes
