Almond Rice
This is the side dish my mom asks me to make every time I come to visit. It taste great with baked chicken or any grilled meat

- 2 teaspoons butter
- ½ cup onion, chopped
- ½ cup celery, chopped
- 1 apple, chopped
- ½ ts thyme
- ¼ ts pepper
- 2 cups cooked rice
- 1/3 cup slivered almonds
- Preheat oven to 375'
- Sauté onions, celery and apples in the butter
- Add thyme and pepper. Mix well
- Add rice and almonds
- Cook for 30-45 minute
