Fresh Corn Salsa

This is truly one of my most favorite side dishes. It can be used as a topping on fajitas, as a side on any grilled meat, or on top of fish

Fresh Corn Salsa

  • 3 medium corn on the cob, corn removed from cob (Can also use 1 cup frozen corn)
  • 15 oz canned white beans, rinse well
  • 3 medium tomatoes, diced small
  • 1 small red onion, diced
  • 1 jalapeño, diced very small (use less if you dont want it spicy)
  • 1 medium green pepper, diced small
  • ½ avocado, diced
  • Cilantro Dressing:
  • 1 cup cilantro
  • 1 cup olive oil
  • ½ cup apple cider vinegar
  • 2 tbsp honey, or ¼ cup maple syrup
  • 3 cloves garlic minced
  1. To make the Fresh Corn Salsa, mix everything very gently together
  2. To make Cilantro dressing, add all to food processor and mix very well (Can stay in refrigerator very well)
  3. Add ¼ cup, or to taste cilantro dressing, mix very gently
